Wallachian cuisine: what to taste in the Beskydy and Rožnov

The cosy interior of the Anděl café in Rožnov pod Radhoštěm

You cannot get to know Wallachia from a lookout tower alone. You have to taste it too. And trust me, the local cuisine can really fill you up after a day spent on the ridges of the Beskydy. Let me tell you what you definitely should not miss.

Dishes you must taste

Wallachian cuisine is honest and hearty – it grew up where people had to work hard and warm up properly in winter.

  • Kyselica – a traditional soup of sauerkraut juice, potatoes, sausage and cream. A classic that gets you back on your feet.
  • Cabbage soup and potato soup – simple, but made with love.
  • Smoked meat, sausages and pig-slaughter specialties – Wallachians take pride in their smoked meat.
  • Potatoes a hundred ways – flatbreads, šužky, dumplings.

A sweet finish: frgály

When we talk about Wallachia, I cannot leave out Wallachian frgály. They are large flat cakes with poppy seed, curd cheese, plum jam or pears. People take them home as a souvenir, and I do not blame them. They are made for good coffee.

Slivovitz belongs to the region

In Wallachia, people distill. Homemade slivovitz is almost a cultural matter here, and every homestead has its own recipe. If you taste it, do so with restraint – it is the real thing.

Where to find the traditional flavours

You will get the most authentic experience at the Wallachian Open-Air Museum, where food is served as it once was. The local pubs and mountain chalets around Pustevny and Radhošť are great too. I have written separately about exactly where to eat well in Rožnov – take a look so you are not left guessing.

And when you fancy something sweet and coffee

For meat and dumplings you go elsewhere, but for specialty coffee and a homemade cake you come to us. Our café is open every day 12:00–19:00, and pastry chef Marcela bakes seasonally – including vegan, gluten-free and lactose-free cakes. After a trip it is exactly what you deserve.

And if you want to explore the Beskydy properly without going home every day, take a look at our rooms. Breakfast is included, so you set off in the morning fully charged.
